Cuvée Aurélia - Rosé

INTRODUCTION
Full and aromatic, the Aurélia cuvée is a gastronomic wine that stands out thanks to its finesse and originality.

CLIMATE
The 2019 vintage began with a warm and pleasant winter that lead to an early spring followed by a warm and very dry summer. This impeded the normal ripening of the grapes but with patience we waited for them to achieve optimal ripeness. Small yields but great potential.

GRAPE VARIETIES
40% Mourvèdre, 30% Grenache, 30% Syrah.

VINIFICATION
Plot by plot; 3 hour skin maceration at 12 ° C; pressing with rapid separation of press juices; stabulation at 4 ° C for one week; cold static settling; fermentation in barrels and ovoid vats; control of the fermentation temperature at 16 ° C; blockage of malolactic fermentation; aging on lees and batonnage for 6 months.

TASTING NOTES
Elegant pink hue with salmon reflections. The nose is expressive and complex with a floral touch (broom), notes of candied fruit (melon, mango), sweet spices (cinnamon). The palate is ripe, full with a touch of freshness on the attack (grapefruit), there are candied fruit and it ends with notes of sweet almonds. A beautiful structure reinforces the original and elegant character of this gastronomic rosé.

MEAL SUGGESTION
Scallops, pan-fried foie gras, sole meunière.

Vivid orange-pink. Highly fragrant orange and strawberry scents are complemented by suggestions of lavender and white pepper. Juicy, seamless and focused on the palate, offering concentrated citrus fruit and red berry flavours and a suave touch of spicecake. Shows excellent clarity and thrust on a long, sappy finish that echoes the orange note.

Slightly deeper in colour, yet just as good, the 2015 Aurelia Rose has lots of black cherry, black raspberry and orange peel in a medium-bodied, rich, nicely textures style. It’s a layered, food friendly Rose that’s impeccably balanced and will be versatile on the dinner table. 90 points
