L’esprit de Provence - White

In the Esprit de Provence white, the Vermentino expresses itself in all its fresh citrus splendor. This is a great white for the summer and to accompany shell-fish. Think Mediterranean alternative to Sauvignon Blanc and Pinot Grigio.

CLIMATE
The 2016 vintage was characterized by a somewhat warm and pleasant winter, a cool spring and followed by a particularly hot and dry summer. The Mistral blew regularly ensuring there was little disease pressure. Nearly ideal climatic conditions!

VINES
Rolle et Sémillon.

HARVEST
Hand harvested.

WINE-MAKING
Each parcel is vinified separately; short skin contact at 15°C; grapes were pressed with early separation of pressed must; tight cold static must settling; temperature control of fermentation at 16-17°C; racking and blockage of malolactic fermentation.

MATURING AND BOTTLING
4-5 rackings; early fining with bentonite; filtration; blending; stabilization and non-sterile filtration; bottled in the spring.

TASTING NOTES
A very pale and bright yellow with green reflections. It has a delicate nose with floral notes (white flowers) and fruity aromas (pear). The mouth offers a lovely fresh sensation with poise and balance. It is delicate with aromatic finesse of white fleshed fruit and a zest of grapefruit in after taste.

MEAL SUGGESTION
Fish terrine, urchin, mullet salad.

Eye: White gold with green reflections. Nose: elegant, expresses white flowers and vegetal notes, green grass. Palate: beautiful weft, long in mouth, ends on saliva, freshness and residual sugar, return on the white peach. Conclusion: elegant wine on the freshness and a feeling of sweetness. Œil : jane pale aux reflets argentés. Nez : complexe, floral et citronné avec une touche buis et garrigue. Bouche : attaque fraîche et ronde avec un gras et une texture gourmande. Conclusion : un vin fin et charnu très harmonieux, pour les produits de la mer, y compris les poissons en sauce.

Au cœur de l’appellation, le vignoble du Grand Cros côtoie les pins ainsi qu’une oliveraie. Et c’est toute l’âme de la Provence que l’on retrouve dans ce blanc né d’un assemblage de Rolle, complété de Sémillon. Vif et aromatique, le palais laisse le dégustateur sur une très agréable impression d’harmonie. Parfait pour un tartare de saumon aux baies roses. Une étoile.
